Berry Tasty Muffins


What you need:
  • 1 c. flour
  • 1 c. oatmeal
  • 3 tbsp. sugar
  • 1 tsp. salt
  • 4 tsp. baking powder
  • 1 c. blueberries, washed
  • 1 egg
  • 1 c. milk
  • ¼ c. vegetable oil
  • nonstick cooking spray

Equipment and supplies:
  • oven (you'll need help from your adult assistant)
  • mixing spoon
  • 2 large bowls
  • fork
  • muffin/cupcake tin
  • paper muffin/cupcake liners
  • wire rack for cooling muffins
  • measuring cups and spoons
What to do:
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, oatmeal, sugar, salt, and baking powder.
  3. Mix in blueberries.
  4. In another bowl, break the egg and use a fork to beat it just a little bit. Then add the milk and vegetable oil, and mix.
  5. Add egg mixture to the dry ingredients in the large bowl.
  6. Using a mixing spoon, mix about 25 or 30 times. Don't mix too much! Your muffin mixture should be lumpy, not smooth.
  7. Line a muffin tin with paper liners or lightly spray with nonstick spray. Spoon in the muffin mix. Fill each muffin cup about 2/3 of the way up.
  8. Bake for about 20 minutes.
  9. When muffins are finished baking, remove from muffin tin and cool them on a wire rack.
  10. Enjoy your berry tasty muffins!

Crostini with smoked salmon and sour cream

This is one of those effortless starters that feels a little bit special but can be made in a flash from ingredients from your supermarket.

 If you don’t have access to capers, chopped chives or parsley would work well. It’s more about getting some visual greenery and freshness.

 Baguettes are lovely for crostini but I’ve also used crackers or larger slices of sourdough cut into small, bite sized pieces.

- 8 thin slices baguette
- 100g (3 oz) smoked salmon, sliced sour cream
                                                                - capers
-                                                               - lemon cheeks, to serve

 Toast baguette slices lightly on one side. Layer each round with smoked salmon, top with a dollup of sour cream and sprinkle with a few capers and lots of freshly ground black pepper.

Eggless Microwave Oreo Cake!



Ingredients :

  •  20 Oreos
  • 1 cup whole milk , at room temperature
  • 3/4 tsp baking powder
  • 3 tbsp powdered sugar

If have  been getting mails from my viewers to post more microwave baking recipes. I too love baking in microwave, since it is so easy to make and only takes less time to dig into the goodies. So had many easy microwave friendly recipe. Love it so much.
I modified the recipe as per my taste and available of ingredients, still it was a hit. I added a little more cocoa powder and also some chocolate chips. This recipe makes 2 cookies, i made one plain chocolate and one chocolate chip cookie. I loved the chocolate chip ones a lot. Please try this and let me know how it turn out for you...

Makes : 2 Cookies
Ingredients:

All Purpose Flour / Maida - 2 tblspn minus 1 tsp
Cocoa Powder - 1.5 tsp
Unsalted Butter - 1 tblspn melted
Powdered Sugar - 2 tblspn (granulated sugar powdered)
Milk - 2 tsp
Chocolate Chips or Nuts - 1 tblspn for topping (optional)

Method:

In a mixing bowl add all the ingredients and mix well to form a dough. Divide into two equal portions. 

Take a ramekin bowl or any microwave safe bowl, grease it slightly with some butter. Presss on ball in to the bowl and flatten it. Now microwave them for a min.

Remove it let it cool for couple of mins and invert them to a plate.

You can add chocolate chips on top of them before baking too.

Notes:

1)This cookie should be baked in a mug or cup, not in a plate.
2)You can add any topping as you like, some ideas are nuts, chocolate and dried fruits.
3)You can add some vanilla essence too.
4)The cookie will remain soft when you remove it from oven, it gets hard when they get cold. So never bake them more than 1 min.
5)My microwave has a power of 800 watts.
6)My Ramekin Size is Diameter: 3.7 inches (9 cm), Height: 2 inches (5 cm)
7)This cookies should be baked in normal micro mode, not in convection mode
take all your ingredients
 take a  bowl and a spoon
add powdered sugar
pour melted butter
mix well                   
add in flour             
cocoa powder         
milk                         
mix well                  
divide into equal portions
take a baking dish
drizzle some butter
place a dough ball in it
flatten it
once it is flattened
place it in microwave for 1 min and bake
invert it to a plate
take some choco chips
press it slightly             
bake them for a min     
serve
